As part of National Student Money Week happening from 4 - 8 March 2024, The Financial Guidance Team will be hosting a cooking competition for students to take part in called Double Dishes.
The idea
To make your meals go further as a student and get the most for your money. Using similar ingredients, weāll show you how you can switch up your meals to create different dishes.
How to take part
- The Financial Guidance Team provide you with free basic ingredients. Pick up your free ingredients pack on the following dates:
- 4, 6 & 8 March ā The Student Information Desk
- 5 & 7 March ā Double Dishes Stand, The Learning Hub Foyer (Under the large screen)
- You follow our recipes or if youāre feeling adventurous, experiment with your own Double Dishes recipes.
- You submit a photo of your finished meals to enter into our prize draw and be in with chance to win Ā£50 Amazon Gift Card. Submit your entry by tagging @uonmoneymatters on Instagram or email your photo to money@northampton.ac.uk
You have until 11:59pm on 22 March 2024 to submit your entry.
What’s in my free ingredients pack
- 1 x 400g tinned of chopped tomatoes
- 1 x pack of microwave white rice
- 1 x vegetable stock cube
- 1 x pack of pasta (Gluten free/Vegan Pasta available on request)
- 1 x portion of garlic salt
- 1 x portion of mild chilli powder
- 1 x portion of mixed herbs
What you will need to buy
- 1 x 500g or beef mince or vegan mince alternative
- 1 x small onion (optional)
- 1 x handful of mushrooms (optional)
The Recipes
š¶ Chilli Con/Non Carne
Serves 2
Ingredients
- 250g of beef mince or vegan mince alternative
- 1/2 vegetable stock cube (DO NOT INCLUDE IF MAKING VEGAN ALTERNATIVE)
- 200g of tinned chopped tomatoes
- 1/2 tea spoon of garlic salt
- 1/2 tea spoon of mild chilli powder
- 1 pack of microwave white rice
- 1/2 of water
1. Heat up a large frying pan or saute pan over a medium/high heat on the hob.
2. Cut in half your 500g of mince. Put one half back in the fridge and the other half on a chopping board. Chop up the mince to separate and then sprinkle over your 1/2 tea spoon of garlic salt.
3. Once the pan is nice and hot, pop in your mince sprinkled with garlic salt and quickly stir the mince around the pan, frying it off until no red remains/fully browned.
4. Turn the heat down on the hob to a low heat. Sprinkle your 1/2 tea spoon of mild chilli powder over the mince. Stir again to work the mild chilli powder into the mince.
5. Turn the heat up slightly to a low/medium heat and then add in your 200g of tomatoes (This will be half of the tin provided to you in your ingredients pack). Pop some tin foil over the remaining tomatoes in your tin and place in the fridge. Continuously stir the mixture, ensuring that it does not stick to the bottom of the pan.
6. Once the tomatoes and mince are mixed together throughly, add in roughly 1/2 a cup of water, turn heat up to medium/high and mix again. Cut your vegetable stock cube in half. Break one half of the stock cube up with your fingers and sprinkle into the pan. Continuously stir the mixture and mix throughly. Wrap up the rest of your stock cube to use in the next meal.
7. When the mixture starts to bubble, turn the heat down to the lowest setting. Allow to simmer for around 10 mins, stiring occassionally.
8. Follow the instructions on your microwave rice pack and cook rice.
9. Place rice in the bowls and create a well in the centre. Add your Chilli mixture to the well in the middle of the rice. Enjoy š
š Spaghetti or Pasta Bolognese
Serves 2
Ingredients
- 250g of beef mince or vegan mince alternative
- 1 x small onion (optional)
- 1 x handful of mushrooms (optional)
- 1/2 vegetable stock cube (DO NOT INCLUDE IF MAKING VEGAN ALTERNATIVE)
- 200g of tinned chopped tomatoes
- 1/2 tea spoon of garlic salt
- 1/2 tea spoon of mixed herbs
- 200g of pasta/spaghetti
- 1/2 of water
1. Heat up a large frying pan or saute pan over a medium/high heat on the hob.
2. (Optional) If using onions and mushrooms. Chop up half an onion into thin strips. Wash, dry and then slice mushrooms to your preferred thickness
3. Use the remaining half of your 500g of mince. Put on a chopping board. Chop up the mince to separate and then sprinkle over your 1/2 tea spoon of garlic salt.
3. (Optional) Add onion and mushrooms to the pan and fry on a high heat until onions are soft and mushrooms browned
4. Pop in your mince sprinkled with garlic salt and quickly stir the mince around the pan, frying it off until no red remains/fully browned.
5. Turn the heat down on the hob to a low heat. Sprinkle your 1/2 tea spoon of mixed herbs over the mince. Stir again to work the mixed herbs into the mince.
6. Turn the heat up slightly to a low/medium heat and then add in your remaining 200g of tomatoes. Continuously stir the mixture, ensuring that it does not stick to the bottom of the pan.
7. Once the tomatoes, mince, mushrooms and onions are mixed together throughly, add in roughly 1/2 a cup of water, turn heat up to medium/high and mix again. Break your remaining half of the stock cube up with your fingers and sprinkle into the pan. Continuously stir the mixture and mix throughly.
8. When the mixture starts to bubble, turn the heat down to the lowest setting. Allow to simmer for around 10 mins, stiring occassionally.
9. For the pasta/spaghetti – Fill a large saucepan with water, put the lid on and bring to the boil over a high heat. Once the water is boiling, stir in the pasta. Cook the pasta according to the packet instructions. Drain the pasta in a colander over the sink.
9. Place pasta in a bowl and serve bolognese mixture on top. Enjoy š

As part of our Money Week 2024 event, we are running a āDouble Dishesā competition to win a Ā£50 Amazon Voucher ā here are the terms and conditions for entry:
- The promoter is: The University of Northampton whose registered office is at Waterside Campus, University Drive, Northampton, NN1 5PH.
- The Competition is open to students enrolled on courses whose tuition fees are paid directly to The University of Northampton only (either paying their own fees through a Tuition Fee Loan, or paid by an employer), except employees of The University of Northampton.
- There is no entry fee and no purchase necessary to enter this competition.
- By entering this competition, an entrant is indicating their agreement to be bound by these terms and conditions.

- Closing date for entry will be Friday 22 March 2024. After this date, no further entries to the competition will be permitted or counted.

- Create two meals (double dishes) either using the ingredients from our free ingredients pack or create your own meal using your own recipes. Take a photo and share it with us by tagging @uonmoneymatters on Instagram or email it to the team on money@northampton.ac.uk.
- Students can only collect one free ingredients pack from the Money Week desk in the Learning Hub (Tuesday 5 March and Thursday 7 March, 10:30 ā 3pm or from the Student Information Desk on Monday 4 March, Wednesday 6 March and Friday 8 March), however you are welcome to submit multiple entries to this competition. You do not need to use the ingredients provided to enter the competition, you can create dishes using ideas and ingredients of your own.
- The promoter reserves the right to cancel or amend the competition and these terms and conditions without notice in the event of a catastrophe, war, civil or military disturbance act of God or any actual or anticipated breach of any applicable law or regulation or any other event outside of the promoterās control. Any changes to the competition will be notified to entrants as soon as possible by the promoter.
- The promoter is not responsible for the inaccurate prize details supplied to any entrant by any third party connected with this competition.
